Crockpot Mexican Chicken
- Bag of frozen Chicken Breast Tenderloins (2.5-3lb bag)
- 8 oz block of cream cheese (don't use Fat Free! 1/3 less fat or regular is fine)
- Can of Black Beans, drained & rinsed. (or Pinto Beans if you prefer)
- Can of Corn, drained.
- Can of Rotel
Directions:
Put frozen chicken in the crock pot.
Put Cream cheese on top of the chicken.
Dump in the Black Beans (make sure they are drained & rinsed!!!)
Dump in the drained corn.
Dump in the Rotel,
Cover & cook in your Crock Pot on low for 6-8 hours.
Every 2 hours, I stir the ingredients.
You can shred the chicken when it is done, or just leave it as tenderloins.

Angel Chicken Pasta
angel chicken pasta
4 ounces cream cheese, softened
- 1 (10 3/4 ounce) can cream of mushroom soup, reduced-sodium
- 1/4 cup Italian dressing, Kraft Tuscan House
- 1/4 cup dry white wine
- 1 1/2 lbs chicken thighs, boneless and skinless, cut into bite size pieces
- 1/2 lb angel hair pasta, uncooked
- 2 tablespoons fresh parsley, chopped
- Beat cream cheese, soup, dressing and wine with whisk until blended.
- Pour over chicken in slow cooker.
- Cover.
- Cook on High 2 to 3 hours or on Low for 4 to 5 hours.
- Cook pasta as directed on package about 15 minutes before chicken is done.
- Drain.
- Serve topped with chicken mixture and parsley.

Ho Ho Cake
So easy and delicious !!
HOHO Cake
1 chocolate cake mix prepared according to box directions and pour into prepared two 9 inch cake pans and bake for time specified on box.
1 can milk chocolate frosting
Filling::
1 8 oz cream cheese softened
1 stick butter softened
3 cups confection sugar
1 8 oz tub cool whip
Blend cream cheese and butter until smooth, add confection sugar mix well, fold in cool whip then refrigerate.
Once cake is cooled put the filling in the center of the cake then press the top on and then smooth out the sides. Frost with milk chocolate frosting.

Chicken Cabbage Stir Fry
CHICKEN CABBAGE STIR FRY ...
Ingredients
~ 3 chicken breast halves
~1 teaspoon oil of your liking
~3 cups green cabbage, shredded
~1/2 cup diced red bell peppers
~ 1 tablespoon cornstarch
~1⁄2 teaspoon ground ginger
~1 teaspoon garlic powder
~1⁄2 cup water
~Soy sauce to taste
Directions
1. Cut chicken breasts into strips.
2. Heat oil in a frying pan.
3. Add chicken strips and stir fry over medium-high heat, turning constantly until done.
4. Add cabbage and red peppers and sauté 2 minutes until cabbage is crisp-tender.
5. Mix cornstarch and seasonings; add water and soy sauce, and mix until smooth.
6. Stir sauce into chicken/cabbage mixture.
7. Cook until sauce has thickened and chicken is coated, about 1 minute.
8. Refrigerate leftovers within 2 hours. If you have any left over that is wink emoticon
(You can add onions and red peppers to taste)

Yummy Low Carb Meal!!
6 thin sliced chicken breasts
1 container of green onion cream cheese
1/4 cup olive oil
1/2 cup chicken broth...
1 Large package of sliced mushrooms
1 small bag fresh baby spinach
Sprinkle of Weber Herb and Garlic Seasoning
Sprinkle of pepper
8 oz shredded mozzarella cheese
9x13 pan lay out chicken in single layer, top with spinach and mushrooms. Then sprinkle the seasonings over the top. Soften cream cheese and whisk in olive oil and chicken broth. Pour over mixture. Lay piece of foil over the top but do not seal. Bake at 375 for 20 minutes remove foil and bake uncovered for another 20-25 minutes, then sprinkle Motz Cheese on top and Bake uncovered for another 10 minutes or until starting to brown. Let cool for 10 minutes and serve.

Crockpot Creamy Italian Chicken
Clean eating
quinoa and asparagus.
Creamy Italian Chicken over brown rice, noodles or spaghetti squash
Spray Crockpot with cooking spray. Place 1 lb. of chicken tenderloins at the bottom of the crockpot.
In small bowl, combine
½ tsp. salt,
¼ tsp pepper,
½ tsp onion powder,
½ tsp garlic powder,
1 T. dried parsley,
1 tsp. dried oregano,
1 tsp. dried basil
1 pkt stevia (optional)
Sprinkle over top of chicken tenderloins.
Add ¼ cup sliced onion and 1 T. minced garlic.
In a small bowl, mix together 2 T. cornstarch (already dissolved in 2 T. water) with ½ c. unsweetened almond milk and ½ cup chicken broth.
Pour over chicken. Cover and cook on high for 2-3 hours or on low for 4-5 hours, (or until chicken is cooked through, and sauce begins to thicken slightly).
Add 1 cup chopped asparagus and ½ cup sliced cherry tomatoes and cover, cooking another 30 minutes on high.
Turn off heat and stir in ¼ c. Greek yogurt just before serving.

Pasta Bella de'Amanda
olive oil
garlic
Mrs. Dash garlic & herb seasoning
Parmesan cheese
1 can diced tomatoes
1 jar artichokes with water
1 can of olives drained
fresh spinach
pasta
heat oil in large pan, add garlic, Mrs. Dash and Parmesan cheese.
Boil water & start cooking pasta
Add tomatoes, artichokes, olives and fresh spinach and cook until warm and spinach is softened.
Serve over pasta
